2 Tbsp red onion, chopped 1/4 cup fresh spinach 2 Tbsp skim milk 1/4 tsp garlic powder 1 cup egg substitute non-fat cooking spray 2 oz light feta cheese 10 black olives, diced
1. Coat a medium skillet with non-fat cooking spray and heat over medium heat. 2. Sauté onions and spinach until onions are tender and spinach wilts. Set aside in a bowl to cool. 3. Add milk, garlic powder, and egg substitute to vegetable mixture. Mix well. 4. Coat skillet with non-fat cooking spray and heat over medium heat. Add egg mixture to skillet and cook over low heat until brown. Flip and brown on other side. 5. Turn heat to low, sprinkle with cheese and olives, cover skillet and cook 1-2 minutes or until cheese melts.
